Rhubarb Ginger Bars

I decided to do some baking this afternoon, to try and chase my rainy blues away. These bars are delicious and easy to make, use any kind of jam or preserves you like :)

You will need:

Bars:

1.5 cups butter (at room temperature)
3/4 cups brown sugar
3/4 cups white sugar
3.5 cups all purpose flour
3/4 teaspoon salt
2 teaspoons vanilla extract
1.5 cups jam (your choice)

Icing (optional):

1.5 cup icing sugar
2 tbsp butter
1/4 cup milk
1/2 teaspoon vanilla



2: In a medium mixing bowl, beat butter and sugars together until smooth


3: Mix in salt & vanilla.  Slowly mix in all the flour until you have a crumbly mixture that can be formed.


4: Press 1/2 the dough into a greased baking dish (mine is 9.5" x 13")


5: Bake dough for about 20-25 mins untill edges start to brown.  Form the other 1/2 of dough into a ball and wrap in plastic wrap.  Chill in the fridge while the base is browning (this will make for a more crumbly texture on the top).


6: Stir your jam before using to smooth it out a bit.  Spread jam evenly over your base & crumble the other 1/2 of your dough on top (do not press).  Bake for about 30 mins.


7: When bars are done, remove from oven and sprinkle with powdered sugar or drizzle your icing on top. 




8:  Let cool for at least 30 mins before serving & enjoy!
